Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup unsweetened applesauce
  • 1/2 cup vegetable oil
  • 1 1/2 cups brown sugar
  • 2 large eggs
  • 1/4 cup unsulfured molasses
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour the bundt pan.
  3. In a large bowl, whisk together the dry ingredients: flour, baking soda, baking powder, spices, and salt.
  4. In another bowl, mix the wet ingredients: applesauce, vegetable oil, brown sugar, eggs, molasses, buttermilk, and vanilla.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  6. Pour the batter into the prepared bundt pan, smoothing the top.
  7. Bake for 45–50 minutes or until a toothpick comes out clean.
  8. Allow the cake to cool in the pan for 15 minutes before inverting onto a wire rack.
  9. Once cool, you can glaze or dust the cake with powdered sugar, if desired.
