Ingredients
  

  • 1 pizza dough store-bought or homemade
  • 1 cup fresh cherries pitted and halved
  • 4 oz goat cheese crumbled
  • 2 cups arugula
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic reduction
  • Salt and pepper to taste

Method
 

  1. Prepare the grill for direct heat cooking.
  2. Roll out the pizza dough on a floured surface.
  3. Grill the cherries for 3-5 minutes until softened.
  4. Brush one side of the dough with olive oil and place it on the grill.
  5. Grill the dough for about 3-4 minutes or until it has grill marks.
  6. Flip the crust and add crumbled goat cheese, grilled cherries, and arugula on top.
  7. Close the grill lid and cook for another 5-7 minutes until the cheese melts and everything is heated through.
  8. Remove the pizza from the grill and drizzle with balsamic reduction before serving.
