Ingredients
  

  • 250 g plain flour
  • 200 g caster sugar
  • 150 g unsalted butter
  • 3 large eggs
  • 100 ml milk
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Method
 

  1. Preheat your oven to 180°C (350°F) and grease a cake pan.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in the vanilla extract and milk until well combined.
  5. Sift in the flour, baking powder, and salt, gently folding until just combined.
  6. Pour the batter into the prepared cake pan and level the top.
  7. Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Serve plain or dust with icing sugar for a simple finish.
