Ingredients
  

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsalted butter
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar for filling
  • 2/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • Powdered sugar for dusting optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x13-inch baking pan.
  3. Prepare the crust by mixing flour, sugar, and salt.
  4. Cut in the butter until crumbly.
  5. Press the mixture into the prepared pan and bake for 15-20 minutes.
  6. While the crust bakes, prepare the filling by whisking eggs and sugar.
  7. Add lemon juice and zest, mixing until combined.
  8. Pour the filling over the baked crust.
  9. Bake for an additional 20-25 minutes until set.
  10. Cool completely in the pan on a wire rack.
  11. Dust with powdered sugar and slice into bars.
