Ingredients
  

  • 1 cup unsalted butter softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup ground pistachios
  • 1/2 cup chopped pistachios

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream the softened butter and powdered sugar until light and fluffy.
  3. Add in the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour and salt.
  5. Gradually add the flour mixture to the creamed butter mixture, mixing just until combined.
  6. Fold in the ground pistachios and chopped pistachios.
  7. Using a cookie scoop or tablespoon, drop dough onto a parchment-lined baking sheet.
  8. Bake for 15-18 minutes, or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
