St Patrick’s Day Cookies made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • ½ cup brown sugar packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp mint extract
  • Green food coloring
  • Sprinkles or decorative sugar optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar.
  4. Add eggs, vanilla extract, and mint extract, mixing until just combined.
  5. Slowly add the dry ingredients to the wet mixture, mixing until just combined.
  6. Add food coloring until desired shade of green is achieved.
  7. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Decorate with sprinkles or decorative sugar, if desired.
