Method
- Prepare the eggplants by blackening them
- Once charred, allow them to cool and peel
- Chop the eggplant flesh and place in a mixing bowl
- Add minced garlic and olive oil
- Stir in smoked paprika, lemon juice, salt, and pepper
- Taste and adjust seasoning as needed
- Chill before serving
- Serve garnished with fresh parsley
