Ingredients
  

  • 2 medium eggplants
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish

Method
 

  1. Prepare the eggplants by blackening them
  2. Once charred, allow them to cool and peel
  3. Chop the eggplant flesh and place in a mixing bowl
  4. Add minced garlic and olive oil
  5. Stir in smoked paprika, lemon juice, salt, and pepper
  6. Taste and adjust seasoning as needed
