Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter melted
  • Toppings e.g., fresh strawberries, whipped cream, maple syrup

Method
 

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In a separate bowl, whisk together the milk, egg, and melted butter until the mixture is homogeneous.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined; it's okay if there are a few lumps left.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
  5. Pour about 2 tablespoons of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges appear set, about 1-2 minutes.
  6. Flip the pancakes and cook for an additional 1-2 minutes until golden brown.
  7. Remove the pancakes and keep them warm while you repeat with the remaining batter, greasing the skillet as necessary.
  8. Stack the mini pancakes on plates and top with your favorite ingredients, such as fresh strawberries, whipped cream, and a drizzle of maple syrup.
