Delightfully Festive Grinch Christmas Cheesecake

Grinch Christmas Cheesecake made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 16 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 tsp peppermint extract
  • green food coloring as needed
  • Whipped cream for garnish
  • Red and green candy decorations

Method
 

  1. Preheat your oven to 325°F (160°C).
  2. Prepare the crust by combining graham cracker crumbs and melted butter in a mixing bowl.
  3. Press the crumb mixture firmly into the bottom of a 9-inch springform pan.
  4. In a large mixing bowl, beat the cream cheese until smooth and creamy.
  5. Add in the sugar and beat until well combined.
  6. Mix in the eggs, one at a time, beating after each addition until fully incorporated.
  7. Stir in the vanilla and peppermint extracts, along with the green food coloring until you reach the desired hue.
  8. Pour the cheesecake batter over the prepared crust, smoothing the top with a spatula.
  9. Bake in the preheated oven for 60-70 minutes, or until the edges are set and the center is slightly jiggly.
  10. Turn off the oven, crack the door, and let the cheesecake cool in the oven for an hour.
  11. Remove the cheesecake from the oven and allow it to cool completely on a wire rack before refrigerating.
  12. Before serving, decorate with whipped cream and candy decorations.
