Ingredients
  

  • 1 bunch radishes about 8 ounces
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh herbs such as dill, parsley, or thyme

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Clean and trim the radishes.
  3. Cut the radishes in half or quarters, depending on size.
  4. In a large bowl, toss radishes with olive oil, salt, and pepper.
  5. Spread the seasoned radishes in a single layer on a baking sheet.
  6. Roast for 20-25 minutes, stirring halfway through.
  7. Remove from the oven and toss with fresh herbs.
  8. Serve warm as a side dish or incorporate into salads.
