Ingredients
  

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon smoked paprika
  • 1 tablespoon fresh chives chopped
  • Salt and black pepper to taste

Method
 

  1. Place the eggs in a saucepan and cover with water.
  2. Bring the water to a boil over medium heat, then cover and remove from heat.
  3. Let the eggs sit in the hot water for 12 minutes, then transfer to an ice bath.
  4. Once cooled, peel the eggs and slice them in half lengthwise.
  5. Remove yolks and place them in a mixing bowl. Add mayonnaise, mustard, cayenne pepper, and paprika, then mash until smooth.
  6. Spoon or pipe the yolk mixture back into the egg whites.
  7. Garnish with chopped chives and a sprinkle of smoked paprika.
  8. Serve immediately or chill until ready to serve.
