Ingredients
  

  • 2 ribeye steaks 8 oz each
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium onion thinly sliced
  • 2 hoagie rolls
  • 4 slices of provolone cheese
  • Fresh arugula or spinach for garnish
  • 1 tablespoon balsamic vinegar

Method
 

  1. Prepare the steaks by bringing them to room temperature and seasoning with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear the steaks for about 4-5 minutes on each side for medium-rare.
  4. Remove steaks from skillet and let them rest for 5-10 minutes.
  5. In the same skillet, add the onions and cook until caramelized.
  6. Slice the rested steaks against the grain into thin strips.
  7. Toast the hoagie rolls in the skillet until golden brown.
  8. Layer the steak, caramelized onions, and provolone cheese onto the hoagie rolls.
  9. Drizzle with balsamic vinegar and add fresh greens before closing the sandwich.
  10. Slice the sandwiches in half and serve immediately.
