Ingredients
  

  • 200 g spaghetti
  • 2 large eggs
  • 100 ml heavy cream
  • 50 g grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Cook the spaghetti in a large pot of salted boiling water until al dente, according to package instructions.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat and add minced garlic.
  3. Once the garlic is fragrant, reduce the heat to low and stir in heavy cream, allowing it to warm without boiling.
  4. In a bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper until well combined.
  5. Drain the spaghetti and quickly add it to the skillet with the garlic cream. Toss thoroughly to combine.
  6. Remove the skillet from heat and quickly pour in the egg mixture, tossing vigorously to create a creamy sauce.
  7. Taste and adjust seasoning, adding more salt and pepper if necessary.
  8. Serve immediately, garnished with chopped parsley.
