Ingredients
  

  • 4-5 lbs beef chuck roast
  • Salt and pepper
  • 2 tablespoons vegetable oil
  • 1 large onion sliced
  • 4 cloves garlic minced
  • 4 medium carrots chopped
  • 3 stalks celery chopped
  • 4 cups beef broth
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste

Method
 

  1. Season the roast with salt and pepper.
  2. Heat vegetable oil in a skillet over medium-high heat.
  3. Sear the roast on all sides until browned.
  4. Transfer the roast to the slow cooker.
  5. Add onions, garlic, carrots, and celery around the roast.
  6. Pour in the beef broth, followed by Worcestershire sauce and tomato paste.
  7. Sprinkle thyme and rosemary over the ingredients.
  8. Cover the slow cooker and cook on low for 8-10 hours.
  9. Check for doneness before serving.
  10. Let the roast rest before slicing.
