Ingredients
  

  • 2 cups fresh cherries pitted
  • 2 tablespoons granulated sugar
  • 1 tablespoon olive oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • Pinch of salt

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pit the cherries carefully.
  3. Combine cherries with sugar, olive oil, vanilla, lemon juice, and salt in a bowl.
  4. Spread the cherry mixture in a single layer on a baking sheet.
  5. Roast the cherries in the oven for 20-25 minutes, stirring halfway through.
  6. Remove from the oven and let cool slightly.
  7. Serve warm or at room temperature.
