Ingredients
  

  • 8 oz chickpea pasta
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper diced
  • 1/4 red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup feta cheese crumbled (optional)
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Method
 

  1. Cook chickpea pasta according to package instructions.
  2. Drain and rinse the pasta under cold water.
  3. In a large mixing bowl, combine the cooked chickpea pasta, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  4. Add feta cheese if using, and toss gently to combine.
  5. In a small bowl, whisk together olive oil and lemon juice, then season with salt and pepper.
  6. Pour the dressing over the salad and toss to coat thoroughly.
  7. Taste and adjust seasoning as needed before serving.
  8. Chill for at least 30 minutes before serving to allow flavors to meld.
