Ingredients
  

  • 1 pound shrimp peeled and deveined
  • 1 medium onion diced
  • 1 bell pepper diced
  • 2 stalks celery diced
  • 4 cloves garlic minced
  • 1 can 15 oz diced tomatoes
  • 2 cups seafood stock
  • 2 tablespoons olive oil
  • 1 tablespoon Creole seasoning
  • 1 bay leaf

Method
 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion, bell pepper, and celery to the skillet.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the diced tomatoes, seafood stock, and bay leaf.
  5. Sprinkle in the Creole seasoning and stir to incorporate.
  6. Bring the mixture to a simmer and cook for 10 minutes.
  7. Add the shrimp to the skillet and cook for about 5-7 minutes.
  8. Remove the bay leaf and adjust seasoning as needed.
  9. Serve warm over rice or with crusty bread.
