Festive Christmas Stuffed Beef Tenderloin Recipe

Christmas Stuffed Beef Tenderloin made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 to 3 pounds beef tenderloin
  • 1 cup mushrooms finely chopped
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup spinach cooked and chopped
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh rosemary chopped
  • Salt and pepper to taste
  • Olive oil
  • Kitchen twine for tying

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the stuffing by sautéing onions, garlic, and mushrooms in olive oil until softened.
  3. Add the cooked spinach, breadcrumbs, Parmesan, rosemary, salt, and pepper to the sautéed mixture, stirring well.
  4. Trim the beef tenderloin of excess fat and make a deep slit down the center, being careful not to cut all the way through.
  5. Stuff the tenderloin with the prepared mixture, packing it tightly, and tie it with kitchen twine.
  6. Season the outside of the tenderloin with salt and pepper, then sear it in a hot skillet with olive oil for a few minutes on each side.
  7. Transfer the seared beef to a roasting pan and cook in the oven for 20 to 30 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
  8. Remove from the oven and let rest for 10 to 15 minutes before slicing.
  9. Slice, serve, and enjoy your beautifully stuffed beef tenderloin.
