Ingredients
  

  • 4 cod fillets 6 oz each
  • 1 cup fresh breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley chopped
  • 1 tablespoon fresh thyme chopped
  • 2 cloves garlic minced
  • 1/3 cup olive oil
  • Salt and pepper to taste
  • 1 lemon cut into wedges

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a baking dish by lightly greasing it with olive oil.
  3. In a mixing bowl, combine fresh breadcrumbs, Parmesan cheese, parsley, thyme, garlic, and olive oil.
  4. Season the cod fillets with salt and pepper, then place them in the prepared baking dish.
  5. Evenly divide the breadcrumb mixture over the cod fillets.
  6. Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.
  7. Remove from the oven and let it rest for a few minutes before serving.
  8. Serve with lemon wedges on the side.
