Preheat your oven to 400°F (200°C).
Wash and slice the baby potatoes in half.
In a large mixing bowl, combine the halved potatoes, olive oil, ranch seasoning, salt, and pepper. Toss until evenly coated.
Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
Roast the potatoes in the preheated oven for about 30 minutes, or until tender and golden brown, stirring halfway through.
Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese over the hot potatoes. Return to the oven.
Bake for an additional 10 minutes, or until the cheese is melted and bubbling.
Remove from the oven and let cool slightly before garnishing with fresh parsley.
