Flavorful Chicken Broccoli Pasta for Easy Dinners

Ingredients
  

  • 8 ounces penne pasta
  • 2 boneless skinless chicken breasts (about 1 pound)
  • 2 cups fresh broccoli florets
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1/4 cup fresh basil chopped (optional)

Method
 

  1. Cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, prepare the broccoli by blanching it in boiling water for 2-3 minutes.
  3. Drain the broccoli and transfer it to ice water to stop the cooking process.
  4. In a large skillet, heat olive oil over medium heat, then add diced chicken and season with salt and pepper.
  5. Add minced garlic and red pepper flakes, cooking until fragrant.
  6. Once the chicken is cooked through, stir in the cooked pasta and broccoli.
  7. Sprinkle with Parmesan cheese, allowing it to melt into the chicken and pasta mixture.
  8. Garnish with fresh basil if desired and serve immediately.
