Ingredients
  

  • 1 lb boneless skinless chicken thighs
  • 4 cloves garlic minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp smoked paprika
  • 1 tsp ground turmeric
  • 1/4 cup plain yogurt
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • Tahini or garlic sauce for drizzling

Method
 

  1. Prepare the marinade for the chicken.
  2. Marinate the chicken.
  3. Cook the chicken.
  4. Rest then slice the chicken.
  5. Prepare the rice or quinoa.
  6. Assemble the bowls.
  7. Drizzle and serve.
