Ingredients
  

  • 4 medium Mexican zucchini sliced
  • 1 cup corn kernels fresh or frozen
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • ½ cup shredded cheese optional

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onion until translucent, about 3-4 minutes.
  3. Add minced garlic and chili powder; cook for 1 minute.
  4. Incorporate zucchini and corn, seasoning with salt and pepper.
  5. Sauté for about 7-10 minutes, stirring occasionally.
