Flavorful Mushroom Stuffed Chicken Breast Recipe

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 8 ounces of mushrooms cremini or button
  • 1/2 cup onion finely chopped
  • 2 cloves garlic minced
  • 1 cup fresh spinach chopped
  • 1/2 cup cream cheese softened
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onions and cook until translucent, about 5 minutes.
  3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  4. Stir in the chopped mushrooms and spinach, cooking until the mushrooms release their moisture and the spinach wilts, about 4-5 minutes.
  5. Remove the skillet from heat and stir in the cream cheese, Parmesan cheese, thyme, salt, and pepper until well combined.
  6. Using a sharp knife, make a pocket in each chicken breast without cutting all the way through. Season with salt and pepper.
  7. Stuff each chicken breast with the mushroom mixture, packing it well to ensure each bite is flavorful.
  8. Heat the remaining olive oil in the skillet over medium-high heat and sear the stuffed chicken breasts for 3-4 minutes per side until golden brown.
  9. Transfer the seared chicken breasts to a baking dish and cover with foil. Bake for 25-30 minutes or until the chicken is cooked through and juices run clear.
  10. Remove the chicken from the oven and let it rest for 5 minutes before serving.
