Ingredients
  

  • 4 boneless skinless chicken breasts
  • 3 cups fresh spinach
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
  3. Add the chicken to the skillet, browning on both sides for about 5-7 minutes each.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
  6. Add the chicken broth to the skillet, scraping up any browned bits from the bottom.
  7. Stir in the spinach and let it wilt for 2-3 minutes.
  8. Return the chicken to the skillet and sprinkle Parmesan cheese over the top.
  9. Cover the skillet and simmer for an additional 5 minutes until chicken is cooked through.
  10. Serve warm, garnished with additional Parmesan if desired.
