Heat olive oil in a large skillet over medium heat.
Season the chicken breasts with salt, pepper, and Italian seasoning.
Add the chicken to the skillet, browning on both sides for about 5-7 minutes each.
Remove the chicken from the skillet and set aside.
In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
Add the chicken broth to the skillet, scraping up any browned bits from the bottom.
Stir in the spinach and let it wilt for 2-3 minutes.
Return the chicken to the skillet and sprinkle Parmesan cheese over the top.
Cover the skillet and simmer for an additional 5 minutes until chicken is cooked through.
Serve warm, garnished with additional Parmesan if desired.
