Season the chicken with salt and pepper.
Heat olive oil in a large skillet over medium heat.
Add the chicken breasts to the skillet and cook for 5-7 minutes on each side.
Remove chicken from the skillet and set aside.
In the same skillet, add minced garlic and sauté for 1 minute.
Stir in the rice, chicken broth, Italian seasoning, and Parmesan cheese.
Return the chicken to the skillet on top of the rice mixture.
Cover the skillet and simmer for 20 minutes.
Check the rice for doneness and season to taste.
Garnish with fresh parsley and serve.
