Flavorful Stuffed Chicken Breasts for Any Occasion

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup fresh spinach chopped
  • 1/2 cup cream cheese softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sun-dried tomatoes chopped
  • 2 garlic cloves minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine spinach, cream cheese, mozzarella, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper.
  3. Carefully butterfly each chicken breast, making a pocket for the filling.
  4. Stuff each chicken breast with the prepared mixture, securing with toothpicks if necessary.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat.
  6. Sear the stuffed chicken breasts for 3-4 minutes on each side or until browned.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  8. Remove from the oven and let the chicken rest for 5 minutes before slicing.
  9. Serve warm, garnished with fresh herbs if desired.
