Ingredients
  

  • 2 cups cherry tomatoes halved
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh basil chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Toss halved cherry tomatoes with olive oil, salt, and pepper.
  3. Spread the tomatoes on a baking sheet and roast for 20 minutes.
  4. In a mixing bowl, combine roasted tomatoes, feta cheese, fresh basil, lemon juice, and garlic powder.
  5. Taste and adjust seasoning with salt and pepper.
  6. Transfer the dip into a serving bowl and drizzle with extra olive oil and a sprinkle of fresh basil for garnish.
  7. Serve warm with pita chips, crackers, or vegetable sticks.
