Ingredients
  

  • 2 medium eggplants
  • 4 ripe tomatoes diced
  • 1 cup fresh basil leaves chopped
  • 3 cloves garlic minced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Method
 

  1. Prepare the eggplant noodles by slicing them into thin strips.
  2. Sprinkle salt over the eggplant strips and let them sit for 30 minutes.
  3. In a large skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant.
