Fresh Bruschetta with Mozzarella for Summer Gatherings

Ingredients
  

  • 1 baguette sliced into 1/2 inch pieces
  • 3 cups ripe tomatoes diced
  • 8 oz fresh mozzarella diced
  • 1/4 cup fresh basil leaves chopped
  • 2 cloves garlic minced
  • 3 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Slice the baguette into 1/2 inch pieces and arrange them on a baking sheet.
  3. Brush the slices with a bit of extra-virgin olive oil.
  4. Toast the bread for about 8-10 minutes, or until golden brown.
  5. In a bowl, combine the diced tomatoes, mozzarella, garlic, basil, and olive oil.
  6. Season the mixture with salt and pepper to taste.
  7. Once the bread is toasted, remove it from the oven and let it cool slightly.
  8. Spoon the tomato and mozzarella mixture onto each toasted slice.
  9. Serve immediately and enjoy!
