Hearty Black Bean and Quinoa Chili Recipe

Ingredients
  

  • 1 cup quinoa rinsed
  • 2 cans 15 oz each black beans, drained and rinsed
  • 1 can 28 oz diced tomatoes
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper chopped
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • Optional: 1 jalapeño chopped

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and sauté until translucent.
  3. Stir in the garlic and chopped bell pepper; cook for an additional 3 minutes.
  4. Add chili powder, cumin, and smoked paprika; stir well.
  5. Add diced tomatoes, black beans, quinoa, and vegetable broth.
  6. Bring to a boil, then reduce heat and let simmer for 25-30 minutes.
  7. Check for seasoning and adjust with salt and pepper.
  8. Serve hot, garnished with optional toppings.
