Hearty Irish Beef Stew for Cozy Nights

Ingredients
  

  • 2 lbs beef chuck cut into 1-inch cubes
  • 4 cups beef broth
  • 2 tablespoons vegetable oil
  • 3 medium carrots sliced
  • 2 medium potatoes diced
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon bay leaf
  • Salt and pepper to taste
  • 1 tablespoon Worcestershire sauce

Method
 

  1. Heat the vegetable oil in a large pot over medium-high heat.
  2. Brown the beef cubes on all sides in batches, removing them once seared.
  3. In the same pot, add chopped onions and cook until softened.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Add the tomato paste, stirring to coat the mixture.
  6. Return the browned beef to the pot along with carrots, potatoes, thyme, bay leaf, and Worcestershire sauce.
  7. Pour in the beef broth and bring to a boil.
  8. Reduce heat to low, cover, and simmer for 1.5 to 2 hours.
  9. Adjust seasoning with salt and pepper before serving.
