Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 2 cups cream cheese softened
  • 1 cup pumpkin puree
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ground ginger

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the crust: In a mixing bowl, combine graham cracker crumbs and melted butter until the mixture resembles wet sand.
  3. Press the crumb mixture evenly into the bottom of a greased 9x13 inch baking pan.
  4. Bake the crust for 10 minutes, then remove it from the oven to cool.
  5. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  6. Add the pumpkin puree, sugar, eggs, vanilla, and spices. Mix until well combined.
  7. Pour the pumpkin cheesecake mixture over the baked crust, spreading it evenly.
  8. Bake the bars for an additional 30-35 minutes, or until the center is set but slightly jiggly.
  9. Remove from the oven and allow to cool completely in the pan on a wire rack.
  10. Once cooled, refrigerate for at least 2 hours before slicing and serving.
