Ingredients
  

  • 4 salmon fillets 6 oz each
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 lemon juiced and zested
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 cup cherry tomatoes halved
  • 1 medium zucchini sliced into half moons
  • 1 red bell pepper sliced

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the marinade by whisking together olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
  3. Place the salmon fillets on one side of a large sheet pan and arrange the cherry tomatoes, zucchini, and red bell pepper on the other side.
  4. Drizzle the marinade over the salmon and vegetables, ensuring everything is well-coated.
  5. Roast in the preheated oven for 15-20 minutes or until the salmon flakes easily with a fork.
  6. Serve immediately, garnished with additional lemon slices and fresh herbs if desired.
