Ingredients
  

  • 8 oz spaghetti or fettuccine
  • 1 cup ricotta cheese
  • 1 lemon juice and zest
  • 2 tbsp olive oil
  • 1 garlic clove minced
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Method
 

  1. Cook the pasta according to package instructions.
  2. While the pasta cooks, heat olive oil in a pan.
  3. Add minced garlic and sauté for 1-2 minutes.
  4. Incorporate ricotta, lemon juice, and zest to the skillet.
  5. Add in the drained pasta.
  6. Adjust the sauce with reserved pasta water.
  7. Season with salt, pepper, and fresh herbs.
  8. Serve immediately.
