  • 2 cups watermelon purée
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp baking powder

  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp salt

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9x5 inch loaf pan by greasing it lightly or lining it with parchment paper.
  3. In a bowl, mix together the watermelon purée, sugar, and eggs until well combined.
  4. Add in the vegetable oil and vanilla extract, stirring until blended.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  6. Gradually add the dry mixture to the wet mixture, folding gently until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
