Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1/2 cup corn syrup

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin by greasing it or lining with paper liners.
  3. In a large mixing bowl, combine the dry ingredients: flour, baking powder, baking soda, salt, brown sugar, and granulated sugar.
  4. In a separate bowl, whisk together the melted butter, eggs, vanilla extract, and corn syrup.
  5. Pour the wet mixture into the bowl with the dry ingredients and gently fold until just combined.
  6. Gently fold in the chopped pecans until evenly distributed.
  7. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  8. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.
