In a mixing bowl, combine the sliced apricots, almond flour, granulated sugar, cornstarch, vanilla extract, and salt.
Spoon the apricot mixture onto the center of the pie crust, leaving a 2-inch border around the edge.
Fold the edges of the crust over the apricot filling, pleating it as you go.
Brush the crust with the beaten egg and sprinkle sliced almonds on top.
Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
