  • 4 boneless skinless chicken breasts
  • 2 medium potatoes diced

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the potatoes by washing and dicing them into cubes.
  3. In a large bowl, mix the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  4. Spread the seasoned potatoes evenly on a baking sheet.
  5. Prepare the chicken by patting it dry and seasoning both sides with salt and pepper.
  6. Dredge each chicken breast in grated Parmesan cheese, coating both sides evenly.
  7. Place the coated chicken breasts on the baking sheet with the potatoes.
  8. Bake for 25-30 minutes, or until the chicken is cooked through and potatoes are tender.
