Refreshing BLT Pasta Salad for Any Occasion

BLT Pasta Salad made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 8 oz rotini pasta
  • 6 slices of bacon
  • 2 medium tomatoes diced
  • 1 cup romaine lettuce chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions.
  2. Cook the bacon until crispy, then chop into pieces.
  3. In a large bowl, combine cooled pasta, bacon, diced tomatoes, and chopped lettuce.
  4. In a separate bowl, whisk together mayonnaise, apple cider vinegar, and Dijon mustard.
  5. Pour the dressing over the pasta mixture and toss gently until coated.
  6. Season with salt and pepper to taste, adjusting as necessary.
  7. Chill for at least 30 minutes before serving.
