Ingredients
  

  • 8 oz. pasta fusilli or penne
  • 1 can 5 oz. tuna in water, drained
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup bell pepper diced
  • 1/4 cup fresh parsley chopped
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions.
  2. Prepare the vegetables while the pasta cooks.
  3. In a large mixing bowl, combine the drained tuna, chopped vegetables, and cooked pasta.
  4. In a small bowl, whisk together the olive oil and red wine vinegar.
  5. Pour the dressing over the salad and gently toss to combine.
  6. Season with salt and pepper, adjusting to taste.
  7. Chill the salad in the refrigerator for at least 30 minutes before serving.
