Ingredients
  

  • 4 cups fresh strawberries hulled and sliced
  • 2 cups mixed greens
  • 1 cup granola
  • 1/4 cup crumbled feta cheese
  • 1/4 cup toasted almonds roughly chopped
  • 1/2 cup champagne vinegar
  • 1/3 cup olive oil
  • 1 tablespoon honey
  • Salt and freshly cracked black pepper to taste

Method
 

  1. Prepare the strawberries by hulling and slicing them.
  2. Wash and dry the mixed greens thoroughly.
  3. Toast the almonds in a dry skillet over medium heat until fragrant and golden.
  4. Prepare the champagne vinaigrette by whisking together vinegar, oil, honey, salt, and pepper.
  5. In a large bowl, combine the mixed greens, sliced strawberries, feta, granola, and almonds.
  6. Drizzle the champagne vinaigrette over the salad and gently toss to coat.
  7. Serve immediately and enjoy fresh, or chill briefly before serving if desired.
