Reviving Tradition: Authentic Irish Apple Cake

Traditional Irish Apple Cake made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 4 medium apples peeled and sliced
  • 225 g all-purpose flour
  • 150 g granulated sugar
  • 125 g unsalted butter softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

Method
 

  1. Preheat the oven to 180°C (350°F).
  2. Prepare your baking pan by greasing and flouring it thoroughly.
  3. In a large mixing bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. In another bowl, combine the flour, baking powder, spices, and salt.
  6. Gradually add the dry ingredients to the creamed mixture, mixing until just combined.
  7. Fold in the sliced apples gently until evenly dispersed throughout the batter.
  8. Pour the batter into the prepared pan and spread it out evenly.
  9. Bake for 45-50 minutes, or until a skewer inserted comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.
