Rich and Flavorful Crockpot Hot and Sour Soup

Ingredients
  

  • 8 cups chicken or vegetable broth
  • 1 cup sliced shiitake mushrooms
  • 1 cup cubed firm tofu
  • 1 cup bamboo shoots sliced
  • 1/2 cup sliced green onions
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 tablespoons cornstarch
  • 2 large eggs beaten
  • 1 teaspoon white pepper
  • 1 tablespoon sesame oil

Method
 

  1. Prepare the ingredients.
  2. Combine broth and mushrooms in the crockpot.
  3. Add tofu, bamboo shoots, soy sauce, and rice vinegar.
  4. Cook on low for 6–8 hours.
  5. Whisk together cornstarch and water.
  6. Stir in the cornstarch mixture.
  7. Add beaten eggs and stir gently.
  8. Season with white pepper and sesame oil.
  9. Garnish with green onions.
