Satisfying and Simple Chicken Burrito Casserole

Easy Chicken Burrito Casserole made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup cooked rice
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn frozen or canned
  • 1 can 10 oz diced tomatoes with green chiles
  • 1 packet taco seasoning
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 cup salsa
  • 2 tablespoons olive oil
  • 2 green onions sliced (for garnish)

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cooked rice, black beans, corn, diced tomatoes with green chiles, and taco seasoning.
  3. Stir in 1 cup of salsa and 1 cup of cheese to the mixture until everything is evenly coated.
  4. Spread the mixture evenly in a greased 9x13 inch baking dish.
  5. Top the casserole with the remaining cheese and additional salsa if desired.
  6. Cover the baking dish with aluminum foil and bake for 25 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  8. Once done, remove from the oven and let it cool for 5-10 minutes before garnishing with sliced green onions.
  9. Serve warm and enjoy!
