Ingredients
  

  • 2 cups cooked rice
  • 1 pound ground beef or turkey
  • 1 tablespoon taco seasoning
  • 1 cup black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 medium onion diced
  • 1 red bell pepper diced
  • 1 small avocado sliced
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup salsa or pico de gallo
  • Fresh cilantro for garnish

Method
 

  1. Prepare the rice according to package instructions.
  2. In a large skillet, heat a drizzle of oil over medium heat.
  3. Add the diced onion and bell pepper to the skillet and sauté until softened, about 5 minutes.
  4. Add the ground beef or turkey to the skillet, breaking it apart as it cooks, until browned.
  5. Stir in the taco seasoning and mix thoroughly to coat the meat and vegetables.
  6. Add the black beans and corn, stirring to combine, and allow to heat through, about 3-5 minutes.
  7. Serve the cooked rice into bowls and top with the meat mixture.
  8. Top with shredded cheese, salsa, avocado slices, and a sprinkle of cilantro.
