Season the chicken breasts with salt and pepper, then drizzle olive oil over them.
Place the chicken breasts on a baking sheet and bake for 20-25 minutes, or until cooked through.
While the chicken is baking, prepare the bruschetta topping by combining tomatoes, garlic, basil, balsamic vinegar, salt, and pepper in a bowl.
Let the chicken rest for a few minutes after removing it from the oven.
Top each chicken breast with a generous portion of the bruschetta mixture just before serving.
Garnish with additional basil if desired and serve immediately.
