Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 cups cherry tomatoes halved
  • 3 cloves garlic minced
  • 1/4 cup fresh basil chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper, then drizzle olive oil over them.
  3. Place the chicken breasts on a baking sheet and bake for 20-25 minutes, or until cooked through.
  4. While the chicken is baking, prepare the bruschetta topping by combining tomatoes, garlic, basil, balsamic vinegar, salt, and pepper in a bowl.
  5. Let the chicken rest for a few minutes after removing it from the oven.
  6. Top each chicken breast with a generous portion of the bruschetta mixture just before serving.
  7. Garnish with additional basil if desired and serve immediately.
