Ingredients
  

  • 2 cups cooked rice preferably day old
  • 2 tablespoons vegetable oil
  • 1 cup diced vegetables carrots, peas, bell peppers
  • 2 large eggs beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions sliced thinly
  • Salt and pepper to taste

Method
 

  1. Prepare the rice in advance.
  2. Heat a pot or large skillet over medium-high heat.
  3. Add vegetable oil once the pot is hot.
  4. Sauté the diced vegetables for 3-5 minutes.
  5. Push the vegetables to the side and pour in the beaten eggs.
  6. Stir in the cooked rice, soy sauce, and sesame oil.
  7. Add the green onions, and adjust seasoning with salt and pepper.
  8. Serve hot and enjoy your homemade pot hibachi fried rice!
