Savor the Flavor of Slow Roasted Chicken

Ingredients
  

  • 1 whole chicken about 4-5 lbs
  • 3 tablespoons olive oil
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 1 lemon halved
  • Fresh herbs rosemary, thyme, or parsley
  • 4 garlic cloves smashed
  • 1 onion quartered

Method
 

  1. Preheat your oven to 300°F (150°C).
  2. Prepare the chicken by removing any giblets from the cavity and rinsing it under cold water.
  3. Rub olive oil all over the chicken, covering it generously.
  4. Season the chicken with salt and pepper both inside and out.
  5. Stuff the cavity with lemon halves, garlic, onion, and your choice of herbs.
  6. Place the chicken on a roasting rack in a roasting pan.
  7. Roast in the preheated oven for 3 to 4 hours, basting occasionally with the rendered juices.
  8. Check the internal temperature; it should read 165°F (75°C) when done.
  9. Let the chicken rest for at least 15-20 minutes before carving.
