Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mixed vegetables bell peppers, zucchini, carrots
  • 1 teaspoon dried Italian herbs

Method
 

  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic powder, paprika, salt, and black pepper to create a marinade.
  3. Add the chicken breasts to the marinade, coating them evenly on both sides.
  4. Prepare the mixed vegetables by washing and cutting them into similar-sized pieces for even cooking.
  5. Toss the vegetables with Italian herbs, olive oil, and a pinch of salt.
  6. Place the marinated chicken breasts in the air fryer basket in a single layer.
  7. Cook the chicken for 10 minutes, then flip and cook for an additional 5-8 minutes until chicken reaches an internal temperature of 165°F (75°C).
  8. Add the seasoned vegetables to the air fryer alongside the chicken for the last 10 minutes of cooking.
  9. Check the doneness of the chicken and vegetables; the chicken should be cooked through and the vegetables tender.
  10. Let the cooked chicken rest for 5 minutes before slicing and serving with the vegetables.
